Drożdżowe kardamonowe bułeczki z jabłkami

Wczoraj prezentowałam klasyczne norweskie bułeczki kardamonowe (boller) – z czekoladą. Dziś wariacja na ich temat – drożdżowe bułeczki kardamonowe z jabłkami. Do przepisu dodałam jedynie owoce, ale zmiana w smaku i strukturze okazała się znaczna. Zapewne ze względu na dodatkową wodę i cukier, dostarczone przez jabłka. Jednym ta wersja smakowała bardziej, innym mniej. Niemniej, obie były pyszne. Polecam bułeczki również z cynamonem lub z gruszkami.

  • 75 g masła
  • 250 ml mleka
  • 50 g świeżych drożdży
  • 2 łyżki cukru Muscovado
  • 3 łyżki cukru kryształu
  • 3 szklanki mąki pszennej
  • 1/8 łyżeczki soli
  • 1.5 łyżeczki mielonego kardamonu
  • 2 jabłka

Stop masło i odstaw do przestudzenia. Podgrzej mleko z 2 łyżkami cukru do ok. 40°C. Dodaj drożdże i wymieszaj. Odstaw do wyrośnięcia.

W dużej misce połącz mąkę, sól, kardamon i pozostały cukier. Wmieszaj masło oraz zaczyn drożdżowy. Wyrób gładkie ciasto, ok. 10 min. Przykryj ściereczką i odstaw do podwojenia objętości. Następnie ponownie wyrób, dodając kawałki jabłka.

Podziel na 8-10 części. Uformuj okrągłe bułeczki. Umieść na blaszce wyłożonej papierem do pieczenia i ponownie odstaw do wyrośnięcia na ok. 1h. Przed pieczeniem możesz posmarować wierzch bułeczek rozmąconym jajkiem (ja tego nie zrobiłam). Piecz w 200 st. C ok. 15-10 min.

CARDAMOM BUNS WITH APPLES

Yesterday I presented classic Norwegian buns (boller) – with cardamom and chocolate. Today my variation on this recipe. The change was rather small because I only added apples. But the buns looked and tasted totally different. The reason for that is probably extra water and sugar provided by fruit. The apples changed the  structure of the dough quite substantially. Some of my tasters liked it more, some less. Nevermind, because both versions of the buns were delicious 🙂 I also recommend them with cinnamon instead of cardamom or pears instead of apples.

  • 75 g unsalted butter
  • 250 ml warm milk
  • 50 g fresh yeast
  • 2 tbsp Muscovado sugar
  • 3 tbsp white sugar
  • 3 cups wheat flour
  • 1/8 tsp salt
  • 1.5 tsp cardamom
  • about 100 g chocolate morsels or chunks

Melt the butter and let it cool down. Pour the milk into a saucepan, add 2 tbsp sugar and heat to about 40°C. Mix in the yeast. Stir until the yeast is fully dissolved. Stand for about 10 min, until the yest gets frothy.

In a large bowl combine flour, salt, cardamom and the remaining sugar. Pour in the melted butter and milk-yeast mixture. Whisk until uniform and dough starts to form. Knead for about 10 min to get smooth dough.

Cover the bowl with a clean kitchen towel and stand for 1 hour to allow the dough to rise and roughly double in size. Peel the apples and cut into small pieces. Mix into the dough.

Divide the dough into 8-10 pieces. Roll each into a round bun. Place on a baking sheet covered with parchment paper. Cover and let stand for another 1 hour to allow them to rise more. Optionally glaze the buns with beaten egg. Bake in a preheated to 200°C oven for about 15-20 min.
